Apple Strudel Muffins

* 2 cups all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 cup butter (or margarine... oil would probably be a suitable substitute as well)
* 1 cup white sugar
* 2 eggs
* 1 1/4 teaspoons vanilla
* 1 1/2 cups chopped apples


* 1/3 cup packed brown sugar
* 1 tablespoon all-purpose flour
* 1/8 teaspoon ground cinnamon
* 1 tablespoon butter (or margarine)


1. Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
2. In a medium bowl, mix flour, baking powder, baking soda and salt.
3. In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
4. In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
5. Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

I am such an apple person. I'll have to try this. The kids get upset, though, when I "sneak" pieces of abhorent things like apples or carrots into cake and muffins...

CM, I used a regular knife to chop it. If you want to 'hide' the apple better, I recommend grating it instead.

I used 2 medium apples. Something generic and sweet.

If you can cream the sugar and margarine by hand then I don't see why you can't make it by hand.

And there weren't any left over to freeze LOL so I have no idea.

The crumb topping is made by mixing the dry ingredients and then cutting in the margarine - with 2 knives, until you have a crumb mixture (unlike the batter where you cream the margarine with the sugar and it's a smooth paste).

For the batter? No idea... maybe someone who makes the substitution on a regular basis can tell you. For the crumb topping, you obviously need the margarine/butter.

I'll bet you can. Or, substitute some for 1/2 the amount of oil.
I definitely have recipes somewhere of apple muffins with applesauce.

Those look so delicious. I wish I had apples in the house.

I made these for after the fast - delicious. I did change a few things: whole wheat flour, 3/4 c. splenda, oil, splenda brown sugar (would use less next time).

I made a double batch last night and it was amazing! This time I used only ww flour, brown sugar and oil. I even used oil for the crumb topping and it was great!!!
My husband said that these are his favourite muffins Very Happy
