The skin gets really nice and crispy from the honey. Why not just pull it off before eating? It keeps the chicken moist.

Where do you put the sauce, under the skin or on top?
If on top, what happens when you remove the skin, does it lose the flavor? (I always remove the skin, we like crispy chicken.)

On top.
The chicken is very flavorful when you remove the skin. It's not the kind of sauce that only sticks to the skin.

Better to place cut sweet potatoes in another pan and have the 2 pans bake side by side at the same time.
The timing and temperature will work for sweet potatoes.

Thanks so much!
I thought that my kids would enjoy, and be more into, eating veggies with the flavor of the honey sauce and chicken. Do you think that would not work?

I wouldn't. I think it would be too strong for the vegetables and would take away some of the juicyness of the chicken. You can serve extra sauce on the side with the baked sweet potato or drizzle it on top once done.

Do you think I could make stuffed capons using this recipe? I'd stuff the capons with rice and vegetables. I thought the honey chicken would be nice for Rosh Hashana but my family prefers capons over bone in chicken .

The sauce didn't stay on the chicken when I poured it. It's basically all on the tray bottom now. Is this how it's supposed to be?
I used maple syrup instead of honey. Now I'm thinking the proportion should have been different because of it.

The sauce is thin - it browns the top and gets absorbed into the chicken because it's pooled in the sauce on the bottom of the pan.
