I see so many impressive, tasty gourmet Shabbat meals posted here
but what about those of us who are having one of "those weeks'?
Why don't we post our own easy Shabbat meals...those weeks when we just don't have the koach time or etc..
this is my easiest "emergency Shabbos" I do
buy challah, cake, tehina and chummus
gefilte fish (just cut carrot, onion, boil in salt water)
chicken soup (have some noodles on the side to put in the soup)
roast honey curry chicken
couscous (make from a bag with the chicken soup)
boil eggs (for egg and tuna salad)
Mimi's cholent...pretty easy..
believe it or not, just to prep takes me just one hour!
What's your "emergency Shabbat" menu, prep technique?

Store bought challah - Usually I make my own
easy fish
Roasted chicken
Roasted potatoes or baked sweet potato/butternut squash
steamed green beans
Dried fruit
Shabbos Lunch:
Some salad and chulent
SS:
Hard boiled eggs, chummus salad and challah
Thats my usual easy shabbos
Sometimes I have stuff in the freezer as I am a big fan of freezing leftovers and so I will pull it out and then its a bit more variety and pretty looking.

Great idea!
My easiest:
Tuna recipe from spice & spirit (Tuna squares, minus the sauce).
Soup: if I'm not making a fresh chicken and there is none in the freezer, tomato soup. Can of tomato puree watered down and simmered with spices, served w/ soup nuts. Can't get any easier than that.
Cube potatoes, onions, maybe carrots put in bottom of crock pot. Sit whole chicken (or parts if that's what I have) on top.
Green beans done quickly on the stove with some soy sauce & garlic.
Desert the brownie recipe from here.
Note: this would be assuming I was going to serve every course and I had nothing in the freezer.

Oh I forgot, yes I boil eggs and depending on what's in the house I might do a carrot salad or cukes & tomatoes also.
My other easy stand by is hot dog chullent. When I do beans, barely, etc (the pre-soak) I do whole bags at a time, then I mix up and freeze in two cup portions so if I decided to make chullent Friday morning the beans, barley, etc is all ready.

not everyone can get away with this but b'h my dh is easygoing.
when I have a hard week I do
fri nt:
challah - bought or from freezer.
fish - tuna and jar of gefile
I skip the soup especially in the summer.
chicken with potatoes under it
choc cake for desert
then shabbos day is the same but hard boiled eggs and cholent.
I also do a fresh veg salad at each meal and serve techina and chumus and pickles - many times my husband will buy more things.

I just take the chicken, put curry powder, pepper, a bit of cinnamon, grated ginger and garlic and some coosbora on it, then I smear honey all over it..(sorry, the smearing comes first the spicing after...too lazy to edit it) add wine or orange juice (not too much) and/or a bit of chicken soup before roasting...(did I forget salt? that too...
the honey gives it a nice crust

as its only DH and I tonight we are having one of those meals:
chopped liver, chummous, other bought dips
no soup cos its too hot out
stuffed chicken (stuffed by the butcher!) with roast potatoes and vegetables
fruit for dessert
prep is about 10 minutes
this really is basic, but we have guests for lunch so had to do loads of prep anyway!

Sounds really nice. Super clear too ! I will have to skip the ginger - I don't usually have it. Do you bake covered or open?

these 'easy' recipes sound delicious anyway. there's nothing dh and I like much better than fri night:
store bought chopped liver + pickles
plain roast chicken (maybe sprinkled with some herbs and garlic) roasted sitting on potatoes, carrots, zucchini so they cook at the same time.
dessert - we don't usually get that far but if we do, a dollop of ice cream with store-bought cake
I do usually have a cake and sometimes cooked chicken or meat pie in the freezer to pull out in an emergency too.
then lunch if it's just us in the summer:
cold roast chicken (can even be roasted at the same time in the same dish as friday night's chicken)
noodles salad
fresh green salad (I usually have a homemade vinaigrette in the fridge). can throw on some dried fruit to dress it up a bit
dessert: same as fri night
when I have guests I usually go all out, so dh enjoys the change.
only problem with simple shabbat is there's not such good leftovers for the week!

grill or bake cutlets in a honey mustard sauce. make a huge salad: lettuce, cucumbers, onion, peppers, hard boiled eggs, add the cut-up cutlets and serve with a honey mustard dressing

My simple shabbos: (So simple that I did this when I got home from the hospital after giving birth, on friday morning- prepared the "whole" shabbos myself.)
Bought challah.
Thick chicken soup- with lots of zuchini, carrots, pumpkin, onion, potato, chicken. Maybe also with lukshen noodles.
THATS IT!
Keep it on the blech and serve it shabbos lunch as well.
My husband b'h doesnt mind. Don't do it often, but did it when home from the hospital, on purim last year when it was friday and I had a million places to be on friday and yet needed food for shabbos...

Hey, a perfect timing for this thread as I've got fever and sore throat (hopefully not flu) so not in the mood for cooking, but got some (though fewer than usual weeks) bochrim coming for dinner AND lunch.
Dinner will be easy as we'll start eating quite late.
Challah (store bought, as in most cases. I can only bake my own if it's R'Ch or for special occasions)
Hummous from the tub, hilbeh
Store bought roasted pepper salad
Chicken soup (extra stock stashed in the freezer)
Roast chicken
Rice with brown noodles
Broccoli kugel (raided ingredients in the freezer)
Store bought pastry and fruits
Lunch
Challah
Hummous, hilbeh (I might make hatzilim if I can get fat aubergines)
Smoked salmon
Vegetarian chammim (already cooked, stashed in the freezer) with brown eggs
Jachnoon (frozen ones)
Chicken schnitzel (extra batch stashed in the freezer)
Israeli salad
Carrot salad
Store bought pastry and fruits

bake a gefilte fish roll or jarred.
fresh salad on shabbos
tabouleh
roasted chicken
green beans or packet of rice
easy cholent-just meat, pots and carrots put up right before shabbos
ice cream for desert

when its just me and my husband friday night I usually just make a chicken soup with lots of veggies and matza balls. we are soo full of eating soup that we never get to the main course any ways to why bother making it.

well I really cheat- but I work nights so when I work thursday nights
sushi- hubby picks up some rolls from supermarket
bought chummus
edamame- steamed in shell
roasted garlic
challah from freezer
ice cream from trader joes or fruit sometimes I'll make strawberry rhubarb soup
shabbos day
chulent with eggs boiled in cholent
salad- benjy's mom nish nosh recipe- I always have the dressing in the fridge
chummus
guacomole
fruit
ss
hubby eats in shul I wash and eat a bowl of cereal
whole shabbos can be done in 45 min
however sushi is expensive so if I wasn't working full time I don't think we would do it
