has anyone started thinking about there menus for pesach. maybe we can all help eachother for seder night and yomtov. iv also lost my pesach hand written baking recipes

OK, I finally dug out my cookbook.
Here's the recipe for chiffon cake:

8 eggs separarted
1 cup sugar
3/4 cup potato starch
juice of half lemon
juice of half orange
1/4 cup oil, optional

Beat yolks with half cup sugar adding potato starch, juices and oil. In a separate bowl, beat whites with other half cup of sugar and fold into yolk mixture. Bake in 9" tube pan on 350 for an hour.

Variation for marble effect:

Pour 2/3 of the batter into tube pan,leaving 1/3 in bowl. Mix 1/3 cup cocoa and 4-5 tbsp water together. Add to remaining batter and mix well. spoon cocoa mixture over white mixture and swirl to obtain marble effect.


This brownie is super light and makes a pretty large cake, enough for the three day tom tov!

12 eggs, separated
2 1/4 cup sugar
1 cup potato starch
3/4 cup oil
3/4 cup cocoa
1 Tbsp. coffee

Beat egg whites until foamy. Gradually add 1 1/4 cup sugar beating until stiff peaks form. In separate bowl beat egg yolks adding 1 cup sugar, oil, potato startch, cocoa and coffee. Fold yolk mixture into whites. Bake in 10x16 pan on 350 for one hour.

Filbert -walnut cake

10 eggs separated 6oz. bittersweet chocolate, melted
11/2 cup sugar 3tbsp. potato starch
1 cup walnuts ground
1 cup filberts ground

Beta egg whites until foamy, grad. add 3/4 cup sugar and continue beating until stiff. In a separate bowl beat yolks, remaining sugar and starch until lemon colored. Stir in melted chocolate. Gently fold whites into yolks. Gradually add walnuts and filberts. Blend ONLY until smooth. Turn into 10" tube pan , bake at 350 for 1 hour .

I hope these help, I've made all of these so I know they are really good.
