Quick Quick while my kitchen is still a mess.. Does anyone have a good onion kugel recipe??

There is a great one in the Green Heimeshe Cookbook:

3 lg onions, diced
2 Tbsps oil
1 egg

Dough:
3 cups flour
3/4 cup oil
3/4 cup water
3/4 tsp salt.


Fry onions in oil until translucent. Let cool. Mix egg in.
Mix the dough together.
Roll dough in jellyroll fashion, into 2 rolls.
Spead half of onion mixture into each roll.

Shmear with egg on top to make shiny
Bake 45-60 minutes on 350.

Just made this today, always a hit.
You can make a mushroom sauce with it if you're feeling fancy

Boruch Hashem it was Delicious!! This recipe is definatly a keeper and very easy to make. I sauted it until it was very brown so it was very sweet.

do you know if this freezes well, and if it does, what is the best way to defrost it?

Onion kugel freezes very well. I am going to prepare it for yom tov and freeze it. I will defrost it and put it on the blech. But you can always rewarm in the oven.

Does it come out good even if you don't rewarm in the oven? Can I take it out of the freezer on Y"T and heat it on the blech and it willcome out okay? That would be a great help!

Thank you thank you thank you for posting this!!! I had a lot of onions to use up and also needed a good side dish for Sukkos. I'm eating a plate of this now and I think I'll make some more!!!

(Yep, I'll definitely make more -- DH is heading for thirds... Rolling Eyes )

Just to clarify - do you shmear the onions on and then roll the dough into a roll? or do you shmear onions on top?

You roll out the dough, put the onions on it while it's flat, then roll it up like a jelly roll with the onions inside. Then brush some beaten egg on top -- and I also sprinkled the rolls with sesame seeds, which was a nice touch!

For rosh hashana I rolled it as usual and then rolled it around like a jelly roll, looked nice...
