Hi!
I am in South America and there is no matsa and of course no matsa meal.
Can I still make kneidelach? How? Would it come out the same?

I don't anything will come out exactly the same but you can experiment making dumplings with potato and flour I guess.

Why not make your own matza? They did it in Egypt
Seriously, if it's for chametz, I don't think it's too hard - mix flour and water, spread out really thin, and bake for 18 minutes or so? stick in a cuisinart?

You can make dumplings from bread crumbs, cracker crumbs or almond meal, or any other type of ground nuts. They won't be exactly the same as kneidlach from matzah meal, but they're a reasonable facsimile.
There's a children's mystery series in which the "detective" is a runaway orphaned Jewish teen from Queens, hiding out in Middle America under the wing of a sympathetic diner owner. On Pesach, she decides to make kneidlach, with no matzah at hand, and concocts some sort of dumpling with Ritz cracker crumbs and parmesan cheese. It's dreadful, of course, and in no way resembles kneidlach, but the diner owner loves it.

no food processor (no bread crumbs)
no cheshek to make matsa
all I have is flour.

You don't need a food processor to make bread crumbs. Toast the bread till it's very dry, put it in a ziplok bag, take out your trusty rolling pin, baseball bat, shillelagh or wooden block, and whack-whack-whack. Or do it the easy way and use a microplane or grater.
You can make dumplings with flour or potato. Google on "Flour dumplings" or "potato dumplings" and you'll get more recipes than you'll ever need.

Dumplings
* 2 cups all-purpose flour
* 4 teaspoons baking powder
* 1/2 teaspoon salt
* 3/4 cup (pareve) milk
Mix flour, baking powder, and salt in a mixing bowl. Add milk and stir to make a soft dough. Add a little more milk or flour, if dough is too thin or stiff. Drop dough from tablespoonfuls onto simmering stew. Cover stew tightly and cook for about 15 minutes without removing cover.
