When we dont have any guest I like to make just a vegie side dish for the chicken course. No carbs is the idea.
Never made roasted vegies.
Anyone have a good recipe out there for that?
Or any other good side dish?

Green beans with crispy shallots
Zuchini with a thick tomato sauce

I do this sometimes for a side dish and it comes out delicious:
Cut up any kinds of vegetables:
zuchinni
canned mushrooms
tomatoes
green peppers
onions
eggplant
spread it out on a greased cookie sheet.
put spices on the vegetables (onion powder, garlic powder and salt)
spray pam over the veggies
put in oven uncovered on 350' till the veggies are soft.

Darn. Green beans was already taken
(that's my only veggie side dish, with the exception of zucchini and eggplant)
I can give a very easy recipe for greenbeans!
1 bag whole frozen green beans
margarine
sauteed onion or minced onion from the shaker
garlic salt and pepper
Put all ingredients in a covered pan, place in oven on 350, and bake till tender but still crisp.

I was just going to post exactly this!! Very easy to do and very tasty as well.

Sounds yum-- I like green beans because they are cheap, compared to asparagus and cauliflower, which are my specialties. I'll bet frozen is even cheaper, I'll have to try them out.
How much margarine do you use-- just some dots all around?
