I imagine he thinks it's kelaim because it's two different kinds of food - fruits and vegetables - in one bowl. Tell him your marriage is also kelaim - two different genders in one home! Very Happy Here are some recipes, though, without any "strange" ingredients.

Colorful Salad (CRW)

¾ c. vinegar
½ c. sugar
¼ c. oil
1 tsp. salt
garlic powder

4 zucchini
4-5 carrots
8 oz. mushrooms
2 baby corn
2 red pepper
2 handfuls snow peas, cut

This makes a lot of salad. Adjust quantities accordingly.

Mushroom Salad (Malka L.)

2 c. mushrooms
½ c. vinegar
½ c. water
1 tablespoons lemon juice
2 tablespoons sugar
3 tsp. dill
1 tsp. salt
¼ c. vinegar
2 tablespoons water

Cook mushrooms in vinegar and water. Combine rest of ingredients to make dressing.

Mrs. P’s Carrot Salad

1 lb. carrots, grated
2 cloves garlic, minced
3-4 strands parsley

Dressing:
juice of one lemon
dash salt
dash pepper
oil

Cauliflower Salad (Hamodia)

1 c. mayonnaise
¼ c. water
1 tablespoon sugar
1 tsp. salt
¼ c. vinegar
3 or more cloves garlic, finely chopped
2 handfuls chopped fresh dill

Cook one head cauliflower. Refrigerate. Pour dressing over when cauliflower is cool and refrigerate again.

Three Bean Salad

1 c. chick peas
1 c. other beans
1 c. green beans
1 c. corn
½ purple onion, chopped
1 red pepper

Dressing:

¼ c. olive oil
¼ c. lemon juice or vinegar
½ tablespoon oregano
½ tablespoon garlic powder
pinch of salt

Chinese Salad (Chaviva M.)

1 small lettuce
1 red pepper, sliced
4 fresh mushrooms, sliced
1 can water chestnuts (regular chestnuts are also good)

Dressing:

1/3 c. lemon juice
1 tsp. salt
1 tablespoon soy sauce
¼ c. sugar
1 small red onion, sliced
½ c. oil

Pour over salad just before serving.

Old-Fashioned Potato Salad (Epicurious.com)

2 lb. equal-size potatoes
3 tablespoons cider vinegar
1 tsp. salt
¾ c. chopped celery
½ c. chopped onion
3 hard boiled eggs, chopped (optional)
1 c. mayonnaise
salt and pepper

Cover potatoes with 2” water and cook till just tender. Drain and cool slightly. While potatoes are cooking, whisk together vinegar and salt in a large bowl until salt is dissolved. When potatoes are just cool enough to handle, peel and cut into 1 inch pieces and add to vinegar mixture as cut. Toss gently with rubber spatula. Let cool to room temperature and add remaining ingredients. Serve room temperature or chilled.

Celery-Carrot Salad (Ruchie W.)

6 carrots
6 stalks celery
1 onion, all thinly sliced on food processor

6 T mayonnaise
¼ c. lemon juice
¼ oil
¼ c. sugar
½ tsp. salt

This also makes a lot. Adjust accordingly.

I was at a vort and they had a beautiful and delicious layered salad. I think it had purple cabbage in it and chickpeas and some kind of dressing on top. I don't remember what else. Does anyone know what salad this is and have a list of other ingredients? Thanks!

I have a recipe for a layered salad, but it sounds different. Did this one have a layer of mayo, then sliced eggs and peas on top?

There are alot of variations to this kind of salad.
Layer shredded lettuce, shredded red cabbage, canned chick peas, shredded carrots, frozen peas, hard boiled egg slices, colored peppers, top with grape tomatoes, olives, imitation bacon bits. Add salad dressing. You can vary it in terms of color and taste--there is no wrong way to do this.
For a sheva brochos I took plastic, dessert goblets and made "mini veggie sundaes" for a pretty appetizer--layering the shredded veggies and putting a dab of mayo and an olive on top for whipped cream and a cherry. You can stick in a thin bread stick for a straw.

Another Spinach Salad dressing

1 c oil (light oil like canola...not olive or peanut)
2 heaping tsp sweet paprika
1/4 c ketchup
1/3 c vinegar
1/2 c sugar
S&P
1 tbsp minced garlic
squirt mustard

shake in a jar - dressing should become a smooth red sauce - this makes alot of dressing and shouldn't all be used at once but refridgerates beautifully for 2-3 weeks!

What can you use instead of oil in salad dressings?

I don't know of a substitute but very often a tablespoon can be used instead of a whole cup...
Sometimes actually, instead of sugar and oil, you can use honey but... depends on your tastes and on the particular dressing of course.

For cakes it's gr8 to use apple sauce instead of oil (or half and half).

The dressing I usually make:
1/4 c. sugar
1/4 c. vinegar
1/4 c. oil
salt and pepper

I usually cut dow the sugar a bit

Broccoli Salad

1 cup of mayonnaise (whipped)
¼ cup red wine vinegar
¼ cup sugar

raw broccoli
toasted cashews
green onions
craisins

I made something similiar this past shabbos (slightly different amounts called for, but same thing basically), but made it from a bag of 'broccoslaw' so there was no issue of checking it. Oh, and my recipe had crunched up ramen noodles and sunflower seeds too.

I have a similar recipe, but no mango, rather a can of manderine oranges, also cucumbers.
This recipe calls for apple cider vinegar, so it should work for your recipe, as well. also oil and sugar, I think
