Spice & Spirit has a recipe for stuffed meatloaf. I used the idea w/ my own meatloaf recipe & used their stuffing which was saute onions, canned mushrooms, celery & breadcrumbs, salt & pepper.
You pat the meat into a 9x13 pan. Pour the stuffing on top toward one side. Then roll it up to cover (you roll the long way) It tasted GREAT & looks beautiful when you slice. Fancy enough to serve to company on shabbos.
