Sauteed Zucchini
-2 Tbsp oil
-1 onion, diced
-2 garlic cloves, crushed
-2 zucchini, cut into thin half moons
-coarse salt and pepper to taste

Heat oil in a large skillet over medium heat.
Saute onion and garlic for 2 minutes.
Add zucchini and saute for 10 minutes.
(I undercook and freeze this up to 2 weeks in advance, no longer.)

mom2cutee:

Potato Puffs
http://imamother.com/forum/vie.....atoes
does not taste as good frozen (I like them fresh straight out of the oven), but I still have frozen ones from RH

Strawberry Pastry Cups - Q&K
-4 oz Parve cream cheese
-2 cups prepared instant vanilla pudding
-16 mini pastry shells
-6 strawberries, sliced

Beat cream cheese with mixer until soff and fluffy, about 2 minutes. Beat in vanilla pudding for about 1 minute. (I'm doing this on YT by hand with cream cheese softened at room temperature, and using a whisk.)
Spoon filling into pastry shells. Garnish with sliced strawberries. (I'm using frozen whole strawberries to garnish.)

(Most of my desserts this time around are these simple to assemble kinds.)

thanks friend! Smile

IamI:

I made 24 very small puffs (used an ice cream scoop), and served each person 3.
I would say that you would get 12 muffins out of the potato dough.

Not QUITE ready, but this will be my inspiration (+ family dishes)

Quote:
I find this menu suggestion in my Sefardic cookbook:

white beans with rice and spinach
fresh fava beans with bits of meat
spinach gratin
tarama
stuffed cabbage leaves or stuffed vine leaves

I find this in my Greek cookbook (recipes and influences are mixed, Sefardic, Romaniote, Italki, Ashkenazi)

Anything sweet based on apples, grapes or quince

Cakes like: ravani (semolina butter cake soaked in sugar syrup and served cold, sometimes topped with thick or whipped cream), baklava, sansandikos (small cakes in triangle, from nuts, almonds, butter, cinnamon, honey, some add dryed apricots, girofle clove, pine nuts, iced sugar syrup, icing sugar), rodanchas (sugary pumpkin or zucchini cake with cinnamon), moustalevria (semolina and wine/grape pressings cake).

Also: stuffed tomatoes, stuffed peppers, meat borekas.

I find a "Eastern Europe menu"

Borscht
Liver balls
Hoshana raba tart (egg sugar poppy seed on it, eat hot)

Yekke menu

Sauerkraut
Linzertote

North African menu

Boiled coliflower with fried eggplant
Stuffed chick/hatchling (stuffed with chicken egg and grapes)
Orange salad

Interesting, Ruchel. I know people who b'davka serve from different cuisines on Succos as it's the Y"T where we bring karbanos for the 70 nations.

Wow that's nice! I originally planned to serve only dishes we have a "link" to (origin wise - which would nix North African and Romaniote), but this idea is great!

Empanadas:

2 cups flour
1 teaspoon salt
1/4 cup cold water
1 egg
1 teaspoon vinegar
3 tablespoons marg./oil

Meat:

1 lb. ground meat
1 onion
2 garlic cloves

Mix flour and salt. Make a well and add egg and vinegar and oil. Cut until course. Add water until holds together but not sticky. knead for a few minutes until smooth, wrap in plastic and refrig. for at least one hour. (May need extra flour.)
(Sometimes I use regualr yeast dough instead of pastry dough.)

Saute onion until light, add garlic and meat. Cook through.

Roll out and cut circles. Add meat, Fold over and press down with tines of fork.

Recipe is to fry, but I am going to bake.

Wow ra-mom, you must spend forever in the kitchen! How do you find the time?? So jealous. Smile

Also you're lucky that your husband will eat that much variety of things! DH won't go near 3/4 of the things on your yummy menu. Oh well...
