Mishpacha Teen pages had a recipe for honey ice cream, where you heat the honey and beat it in with egg yolks. This process I think cooks the eggs and therefore NO RAW EGGS!!
I decided to change it to caramel and I made my own caramel and mixed it with the egg, I also made it pareve by using rich's so here it is!
Caramel-
1/4 c marg
1/3 c packed dark brown sugar
2 TB corn syrup
1-2 TB of Rich's whip
Melt marg, sugar and syrup in small pot. Mix often, once sugar dissolves bring to boil for 1 1/2 mins.
Take off fire and mix in the rich's whip.
Ice Cream-
1/3 c caramel (or I want to try next time heated peanut butter for pb flavor!)
4 LG egg yolks
1 3/4 cups rich's whip
Beat whip till stiff, put in fridge.
Make caramel, or heat it up.
Beat 4 egg yolks till pale yellow in color.
Continue beating, drizzle in the hot caramel/pb/honey
beat 5 mins till cooled.
Fold the whip into the egg mixture- dont mix, you want to keep the volume, so only fold it in.
You will have a bit of extra caramel left so after the egg mixture is folded in you can drizzel the caramel in and fold once more so you have caramel swirls in it- yummy!
Then put into container and freeze.
ENJOY!!!
Just made it- soo good! Might double caramel next time and mix more into it to have more caramel swirl.
