Healthy Muffins

Does anyone have a healthy recipe for muffins? My two year old loves them and I want to make ones without too much sugar (or any at all,) white flour etc. I have carrots, bananas, and apples.

Stevia/Truvia is a natural sugar substitute. I use it to make whole wheat cupcakes for my daughter. I'm sure you can use them for carrot/banana/apple muffins using a regular recipe.

I've made these muffins a few times already and my kids love them. you can try to cut out some of the sugar and use only whole wheat flour.

2 carrots grated
1/2 cup chopped walnuts
1/2 cup dried pineapple/raisins
1/2 cup plus 2 Tbsp flour
2/3 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 cup oats
1 cup buttermilk (or 1 cup soy milk with 1 Tbsp vinegar)
1/2 cup brown sugar
1 large egg

Preheat oven to 400. Coat 12 -cup muffin tin with baking spray.

In a large bowl, toss carrots, walnuts, and pineapple with 2Tbsp flour.
In a separate bowl, mix flour, wh wh flour, baking powder, baking soda, salt, cinnamon and oats.
In a medium bowl mix buttermilk, oil, brown sugar and egg.
Add buttermilk mixture to flour mixture and stir until just moistened. Stir in carrot mixture until just combined.
Divide into muffin cups and bake about 20-25 mins.
Let cool in pan for 5 min then take out to wire rack to cool.

Can s/o post the bais yaakov recipe- I dont have that cookbook?
Also, my dh and kids dont like fruit or carrots in a muffin- what kind can I make that will still be healthy- and taste good enough for them to want to eat it? (if it has banana maybe I can convince them, but not for sure)

I made these and they taste great. I uses craisins instead of the pineapple/raisinis, and they were really good. Not to sweet and taste good for you.

Cottage Cheese Muffins (Tsiyona Kantrowitz in Mishpacha)

Topping (I don't bother with the topping. They're great without)
1/2 cup sugar
1 tsp ground cinnamon

Muffins

2 Cups Cottage cheese
1 Cup brown sugar
2/3 cup butter (or substitute oil. comes out great!)
4 eggs
1 1/2 cups white flour
1 1/2 cups whole wheat flour
1 1/2 tsp ground cinnamon
2 tsp baking soda

Preheat oven to 180 C
Combine the sugar with the teaspoon of cinnamon in a small bowl. Set aside.

Combine the cottage cheese, brown sugar, butter and eggs ina large bowl and beat at medium speed
until creamy. Add the flour, 1 1/2 tsp cinnamon and baking soda. Mix until just moistened.
Stir in the raisins. Spoon batter iinto 24 paper-lined muffin pan cups. Sprinkle each
with the cinnamon and sugar topping.

Bake for 20-25 minutes or until lightly browned.
Serve warm or as a snack.
Freezes well.

I used this recipe a couple of days ago. Changes I made: I used 3 cups of white flour, baking powder instead of baking soda, 1/2 a cup of white sugar instead of 1 cup of brown sugar, & added crasins, a peeled & chopped apple, and a lot of cinnamon. No topping.
They came out really tasty.

Yep. Those cottage cheese muffins are the only ones my kids will eat. They love them! I use the Israeli 5% cheese instead of cottage. I think you can cut down on the sugar as well. when I have applesauce in the house I use it instead of some of the oil/butter to make it healthier. Great recipe!

I used to make a whole wheat blueberry muffin with applesauce, so less oil. I'm pretty sure it did have sugar, but it was great. if anyone is interested let me know and I'll try to dig it up to post it

I have an amazing low fat recipe. Uses zero oil or marg. I can personally attest to them, I make them all the time.

Healthy Double Chocolate Brownie Cakes makes 9

3/4 cup wholewheat flour
1/3 cup cocoa powder
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup unsweetened applesauce
1/3C unrefined cane sugar/brown sugar** (I used a Demerara sugar I found in my local grocery, which is raw cane sugar)
1 tsp vanilla
Around 1/2 cup chopped chocolate or chocolate chips (optional, but so much better!)

Preheat oven to 180°C/355°F.
In a large mixing bowl combine flour, cocoa, baking powder, baking soda and salt.
In a separate medium mixing bowl combine applesauce, sugar and vanilla and pour into dry ingredients.
Mix until just combined and stir through the chocolate.
Pour brownie mixture into greased muffin tins or muffin cups until 3/4 full.
Bake for 6-12 minutes or until brownies are set and the edges start to pull in from the sides.

*If you want to make a pan of brownies, pour batter into a greased and/or lined 8x8 baking pan and bake for around 20 minutes.

It sounds really good! Did u ever try it with only whole wheat flour?

I forgot to mention that I use only 70% whole wheat flour. I never use white flour for any of my baking. They come out so terrific that my kids won't "settle" for any other recipes and constantly turn up their noses at my attempts to try new recipes!

Here are 2 that I make a lot. I use oil and 100% or 70% WW flour for everything, we never have while flour in the house. I try to use Demerara sugar as well

Oat Bran Chocolate Cupcakes

1 C oat bran
1 C flour
1 C sugar + 2 tsp
3/4 tsp baking soda
1 tsp baking powder
1/8 tsp salt
1/2 C cocoa
1/3 C apple sauce
2 eggs
2 tsp vanilla
1 C water.

Mxx, bake at 375 for 19-25 mins

Oatmeal Choc Chip Muffins

1C oats
1 C orange juice
1/2C brown sugar
1/2 oil
1 egg
1 C flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 C choc chips

Mix oat and juice, let stand for 30 minutes. Add remaining ingredients
Bake at 400 for 12 mins (approximately 12 muffins)

Banana Nut Muffins

2-3 ripe bananas
1/2 cup oil
2 eggs
1/2 cup applesauce
2/3 cup of sugar
2 cups flour
2 teaspoons of baking powder
1 teaspoon of baking soda
1 teaspoon of salt
1/4 teaspoon of nutmeg
1 teaspoon of vanilla extract
1/2 cup of chopped walnuts

preheat oven to 350 degrees. place bananas in a mixing bowl and beat with an electric mixer until pureed or mashed. add oil, applesauce, and sugar. add eggs, one at a time. Gradually add dry ingredients and vanilla. Fold in nuts. Bake for 30-35 minutes. Makes twelve 2-4 ounce muffins of six 6-8 muffins.
variation: sprinkle chocolate chips on top of the batter before baking.

Sorry for the delay here is the recipe: (I guess I didn't really stick to it exactly, but it worked, changes listed:)

100% Whole Wheat Blueberry Applesauce Muffins
(Adapted from Beth's beautiful recipe) (I think I made some substitutions based on this original recipe)

2 1/2 cups whole wheat flour (I usually used 70% whole wheat)
3/4 cup raw turbinado sugar (don't know what this is, I use "golden" sugar in Israel)
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup applesauce
1/2 cup canola oil
2 egg whites, beaten (I think I used one whole egg)
1/2 cup vanilla almond milk (I used soy)
1 T lemon juice (didn't include this)
1 cup dried blueberries (I used frozen)

~ Preheat the oven to 375 degrees F. Line muffin tins with paper liners, or coat them with cooking spray.
~ Stir together the whole wheat flour, turbinado sugar, baking powder, baking soda, and salt, and set aside.
~ Whisk together the applesauce, canola oil, egg whites, almond milk, and lemon juice.
~ Gently stir the wet ingredients into the dry until just combined.
~ Fold in the dried blueberries.
~ Bake for 25 to 30 minutes - until the muffins are just turning golden brown on top.
~ Allow them to cool on wire racks - or serve warm! :-)
