you know the dumplings made from a batter of eggs and flour? so they freeze well? would you freeze them, or skip?

my kneidlach froze well, though I dont have a specific recipe
its egg, matsa meal, oil, salt and pepper. possibly a little water/seltser, thought its been so long since I did them last that I cant remember

They freeze so so and tend to get a bit mushy. I find that if you must freeze, the best solution for me is to have it fully defrost before mixing.
Fresh is definitely best though.

IME, nokerlach do not freeze well. They get very mushy when defrosted and tend to fall apart.
