So we are getting ready to start the redecorating our house over the summer and I have to start getting estimates on the work.
What's the best way to do it? Is 3 estimates enough? When do you decided it's enough and just pick 1 person?

It really depends.
If you have very reliable recommendations (from people you know for sure take impeccable care of their homes and have similar values as you in terms of how you like to do business), even one estimate might be enough.
The general guideline is three estimates for big-ticket repairs, especially if you are starting from scratch (no personal recommendations, checking all references), or if you are not sure what the price range "should" be. Sometimes they recommend different ways of doing a job, and while that might be more confusing, it gives you more information for making a decision.
