I'll try to remember tomm. They were heaven with the cappuccino chips but they ran short. It just came back into the stores recently and I've been making-- totally worth it Smile

what do u use as the pareve milk?
I use rice dream but I'm sure it would be even better with a better milk substitute- or better yet, real milk if I'd have a milchig oven.

Yield: 12 large muffins

Ingredients

2 eggs
1 cup sugar
2/3 cup oil
1 cup pareve milk
3 tsp baking powder
1 tsp baking soda
3 cups flour
2 tsp coffee dissolved in ½ cup boiling water
1 cup cappuccino chips

Crumble
1¼ cups flour
1 stick margarine
¼ cup sugar
¼ cup dark brown sugar
1 tsp ground cinnamon
¾-1 cup cappuccino chips

Directions

Crumble together the flour, margarine, sugars, and cinnamon by hand until the mixture resembles crumbs. Add in the cappuccino chips.

Preheat oven to 350° F.

Beat the eggs and add the sugar. Add oil, pareve milk, dry ingredients, and coffee, beating well after each addition. Stir in the cappuccino chips by hand.

Fill muffin holders and top with crumble. Bake for 30 minutes.

I also made emb today for the 3rd time already. also used rice dream wss yummy! Also made it once with real milk twas very good...
