Veggie Saute
saute onions peppers (diff colors makes it nicer), mushrooms and then add 1/3 C teryaki sauce, 1 tsp garlic powder & 1/2 tsp sugar.

String Beans
saute onions w/ 2 cubes of garlic (or 2 fresh cloves garlic) add frozen string beans and about 1/2 cup water and approx 1/3 cup teryaki sauce.

I also have 2 recipes of roasted veggies.. when I get a chance I will try and type them out.

Put frozen green beans in with the already cooked chicken with sauce when you put it to heat up right before yom tov/shabbos. Absorbs flavor and tastes great. Ditto to adding any potatoes/sweet potatoes/carrots etc. to chicken while cooking.

Slice zucchini and pepper
Toss with olive oil, salt, and basil.
Roast 400 for like 20 min

Wash a sweet potato, wrap in silver foil, put in pan (to catch drips) bake for 1 hour. So simple and very yummy for young and old

I do this but I add a few cubes of frozen garlic to the mix as well as sliced eggplant....in addition to what Moonlight posted.

Cut butternut squash in half, brush with olive oil. Sprinkle with brown sugar OR cinnamon. Cover gently with foil (to avoid messy oven ) and bake

Peel whole carrots, put in dish with orange juice and a little brown sugar, bake.

I buy frozen sliced carrots, mix in olive oil, salt, and pepper, and roast til soft

Slice eggplant into 1/2" slices. Toss with olive oil. Arrange in one layer on a baking sheet, line it with baking paper for easy cleanup. Bake till sot then flip them or just bake till browned.

Sauté sliced onions and red pepper. Add some soy sauce and powdered ginger. Mix with frozen green beans and put on a hot part of the blech. It will be perfect by the seuda.

Separate the cloves from at least one head of garlic. Put in a ramekin with olive oil. I usually put it in the oven next to my chicken pan. Cook for an hour. Cover and put on the blech, add oil if needed.

I buy ready cut up butternut squash, roast it uncovered with olive oil, cinnamon, sweetener and salt on 400 for an hour and 350 for another half hour,

So simple!
Pour a 1lb bag of peas into an round dish. Roast in the oven at 350 for 25 minutes, delicious- brings out the natural flavor, you dont lose any vitamins by boiling them in water, it doesnt even need seasoning because roasting them brings out the flavor!

I asked the CRC about the shredded ones that they sell in my supermarket and those are also no good.

I made cauliflower rice with lots of herb cubes on pesach and it was delicious.

sauté onions, carrots slices, mushrooms, baby corn, green beans, peppers and/or anything you like. add stir fry sauce. voila!!
