It does not darken. Regular yerushalmi kugels dark because you caramelize the sugar first. That gives it the color. This kugel has the same basic ingredients as yerushalmi kugel (brown sugar is extra, not in my regular yerushalmi kugel) and has a similar taste, but not the same. I refer to mine as a sweet kugel, not yerushalmi kugel.
