Just cook, shmush, season, mix with eggs & fine matza meal/flour, pour & bake. Use some OJ as well if you want. What's so hard? I do it on Pesach (minus the mm/flour!)

There is a sweet potato kugel (or carrot but I use sweet potatoes in the old yellow spice and spirit. Or listen to Bubby, it works. You can put pie spice (sugar, nutmeg, cinnamon, etc) or pikanti/salty (hawaige, curcum, etc)
Why do you want no crust? Wheat allergy or carb issues? I make "pumpkin" pie with sweet potatoes, soy milk, splenda, eggs and spices. For crust I layer the bottom with finely ground almonds or hazel nuts.

I make pumkin pie without a crust. I just follow the recipe on the back of Libby's Pure pumkin. I substitute vanilla soy milk for the condensed milk in the recipe. Works beautifully. I bake it in a round pyrex.

I can't get Libby's pumkin pie or frozen pie crusts (and I'm NOT in the mood to make my own)...

No one has a recipe for me?
I've made a couple from online in the past (before anyone suggests it) and I wasn't happy with them. I have loads of sweet potatoes. Shabbos is in a couple of hrs and I'd like to try something.

why not just try the spice and spirit recipe without a crust? I'm sure it will be fine, maybe not amazing but certainly good.
or just roast the sweet potatoes.
I just bought some snowcrest shortcrust pastry yesterday, maybe that will work well for piecrusts if you can get it.

I'm scared to try a recipe that calls for a crust... the texture could be totally wrong and it'll be a nightmare to get out of the dish.
I was wondering about using that stuff as a crust.. let me know if you try it and how it works out!

You can alternatively crush up cookies or biscuits for a "crust". You can even use nuts.

I got this recipe from Micki- as a sweet potato pie, but I just bake it in a pan as a kugel. It is really good.
3 sweet potatoes-cooked and mashed
2 eggs
3/4 cup water
1/2 cup sugar
1/2 cup oil
mix all, bake about 1 hour @ 350. done when top if 'firm' (not liquidy).

oh, those sweet potatoes aren't going to last long... making cream of sweet potato soup tonight. Have ppl over for lunch (7 ppl!!!!!) tomorrow and more on Monday.... I'll have to buy more... I just love them!

My MIL bought some Israeli ones a year or so ago (shmitta) The Rav told her to let them rot, then double wrap and chuck them out.
It took months and months...... about 6 months I think.
