We had a coconut for t'beshvat and I saved the juice and we have all the meat as well. What in the world should I make with it?
Easy perhaps would be great.

You can add shredded coconut to muffins such as banana/choc chip, carrot, etc.
I've seen lots of curry recipes that call for coconut milk.

You can just drink the coconut water-very refreshing.

Grate the coconut meat in a food processor and add to cookies, coconut bars, or toast it and use to top a frosted cake.... Very yummy as a plain snack, too.

There's a great recipe in Kosher Palette for oatmeal coconut cookies. They are sooo good!

I have one like brownies ... heavy.

another a choc cake with a filling.

and cookies,which I assume you don't want.
