How about Primavera Chicken from KBD Short on Time? 10 minute prep time. Let me know if you want the recipe.
And Italian Zucchini from Quick & Kosher. 15 minute cooking time (I think.)

Heres the primaver chicken - hope its ok ra mom - the cookbook is on my desk
6-8 chicken leggs with bone and skin
6-8 chicken thighs with bone and skin
1 yellow squash, unpeeled
1 green zucchini, unpeeled
1 quart cherry tomatoes, halved
1 8oz botle italion dressing
Preheat oven to 350 Place teh chicken peices in single layers, skin-side up, into tow 9x13 in baking pans
Slice the squash and zucchini in half leghtwise and slice into 1 inch-thick half-moons. Scatter over teh chicken. Toss on the halved tomatoes
Shake the dressing and drizzle it over the chicken
Bake, uncovered for 2 hours
Remove the chicken to a platter. Tos teh vegetables in teh pan liquid and then scatter them over the chicken
Prep time: 10 Minutes
Enjoy!

(I really appreciate it since I would have had to type up the Primavera chicken, and the Zucchini recipe is saved on my other computer, so all I have to do is copy and paste it tomorrow morning iy"H.)

Italian Zucchini
Ingredients
• 2 Tbsp olive oil
• 1 onion, coarsely chopped
• 2 zucchini, thinly sliced
• 2 tsp prepared crushed garlic
• ½ tsp crumbled, dried oregano
• ½ tsp salt
• ½ tsp pepper
Preparation
Heat the oil in a large skillet over medium heat.
Add onion and sauté 2 minutes.
Add zucchini, garlic, oregano, salt and pepper, and sauté for 3 minutes.
Reduce heat to low, cover and cook for 10 minutes. Serve immediately.
You can also serve pesto to spread on Challah, a pesto pasta salad, focaccia for Shalosh Seudos...

One of the traditional shabbes dishes is osso bucco. Another is beef paupiettes.
For Pessach, ciambelle and matza pizza.
for ciambelle You make the oil hot, you prepare the paste (2/3 minutes), you put in oil 2 or 3 mins. Then you must clean up everything like crazy (including putting what you used in boiling water) because if you reach the 18 minutes thing, it's chometz!

You're right about the pesto completely forgot that
I can make pesto small red potatoes and pesto pasta salad or tomato basil salad..

what about stuffed artichokes?
that is pretty italian
theyre yummy
if u want a recipe Ill post one
it sounded like a patchke and I pushed off making it for a while. Then once when we were having guests, I decided to do it, it was really quick simple and easy, and best of all, everyone loved them
