We have plenty of recipes for Pesach chocolate cakes and brownies, but are looking for a change of pace this year. Anyone have recipes for something like marble cake, coffee cake, etc.? Restrictions: no baking powder.

What would you say to a Pesach Streusel Apple Cake? If you eat gebrokts then you might find this enjoyable. (We like it!)
Note: you can substitute the cake meal with very finely ground matzah meal (should be almost floury in consistency) as well a the vanilla extract (with vanilla sugar) - See below.
PESACH STREUSEL APPLE CAKE
Ingredients
CAKE
(Sugar in this recipes is not listed twice, it is simply separated!)
* 6 Tart apples,peeled and
* 4 tbsp (60ml) Lemon juice
* 2 tsp (10gr) Cinnamon
* 3/4 cup (180gr) Sugar
* 1 pinch Nutmeg
* 6 Eggs
* 1 1/2 cup (360gr) Sugar
* 1 tsp (5ml) Vanilla extract
* 3/4 cup (180ml) Oil
* 2 cups (480ml) Pesach cake meal
* 2 tbsp (30gr) Potato starch
* 1/4 tsp Salt
STREUSAL TOPPING
* 1/4 cup (60gr) Sugar
* 1 1/2 tsp (8gr) Cinnamon
* 1/4 cup (60gr) Chopped nuts
Instructions
Preheat oven to 350°F (175°C)
Toss apples with lemon juice.
Mix together cinnamon, sugar and nutmeg and combine with apples. Set aside.
Beat eggs until light and fluffy, slowly adding sugar and vanilla extract.
Stir in oil, cake meal, potato starch and salt.
Pour half of the batter into a greased 9x13 inch (22x32 cm) baking pan. Spread apple mixture on top. Cover with remaining batter.
Combine streusal ingrediants,and sprinkle on top of batter.
Bake for 1 hour and 10 minutes.

Substitutes:
* Matzah cake meall can be replaced by finely ground matzah meal (fine ground to begin with and then ground in processor to make it extra, extra fine) but you will get slightly varying results.
* Vanilla extract can be replaced with vanilla sugar. Double the amount of sugar (it doesn't have as strong a flavor) I.e 2tsp vanilla sugar to 1tsp vanilla. If you use vanilla sugar, though, decrease the amount of sugar in your recipe by the amount of vanilla sugar you use.

How come I can't find any of them?
Thanks, shayna, but we don't eat gebrokts. Forgot to add that to the restrictions. Also, no margarine, whipped topping or other such processed items.

you cab make sponge cake with nuts and no potato starch. the lubavitch pesach cookbook has recipes. there is a link to one on shmais.

I also edited this after I posted - I note that the poster above me mentioned the same cookbook and that there is a link to it. It's posted here on the board, too (here) if you're interested. They have some nice looking recipes
But if you prefer, here are a few from there. I got these from a friend and her source was that same Neshei Chabad UK pesach cookbook. In any case, I know the recipes have made the rounds but I'll post them here for your benefit. As far as I know, they meet your requirements.
Apple Charlotte
3 eggs separated yolks
2/3 cup sugar
Pinch salt
2 cups grated apples
½ cup ground hazelnuts or 4 tbsp ground walnuts
2 tsp lemon
1 tbsp wine or grape juice
Beat egg yolks and sugar until thick. Add all ingredients besides egg whites. Beat egg whites until stiff. Fold into mixture. Sprinkle nuts on top. Bake at 175 C 35-40 minutes
Carrot Cake
9 egg yolks
1 ¾ cups sugar
1 ½ finely mashed carrots
1 tbsp sweet wine
2 ½ - 3 cups ground almonds
9 egg whites, beaten until stiff
little ground hazelnuts to stiffen
Juice of ½ orange or lemon
Beat yolks and sugar until thick. Add carrots, juice, wine and nuts. Fold in whites. Bake 350 F (175C) for 50 minutes.
Nut Cake
6 eggs, separated
1 cup of liquid sugar
2 cup of nuts
Whisk egg whites until stiff. Add sugar and mix again. Add nuts until the mixture reaches the desired consistency. Bake in a 9X13 tin for 1 hour at 175C. / 350F. Serves 6.
If any of you try/use/make non-gebrokts cakes for pesach and have a winner to share, I'm not fussy - I'll eat anything as long as it tastes good! So please do share! Thanks

Here's my recipe for marble cake. My family loves it, and it does not taste like starch. The recipe is for chiffon cake, and see below recipe for marble variation.
Also, a friend told me that cakes come out better if you don't separate all the eggs. No matter how many eggs the recipe calls for, the last 2 add whole to the yolks. Also, add the starch last otherwise it'll sink to the bottom and you'll have sawdust instead of cake.
8 eggs separated (I only separate 6)
1 cup sugar
3/4 cup potato starch
juice of half lemon
juice of half orange
1/4 cup oil, optional ( I don't think I add it, can't remember)
Beat yolks with 1/2 cup sugar, juices and oil, adding potato starch last. In a separate bowl, beat whites with rest of the sugar until stiff and fold into yolk mixture. Bake in a tube pan for one hour at 350.
If making marble cake, Pour 2/3 of the batter into the tube pan, leaving 1/3 in bowl, Mix 1/3 cup cocoa and 4 Tbsp water together. Add to remaining batter and mix very well. Pour chocolate mixture over white mixture in pan and swirl with a spoon for marble effect.

I never made this cake because my kids won't touch anything with nuts but it sounds yummy so thought I would share it.
Nut Cake Without Potato Starch
9 egg whites
7 egg yolks
1 1/4 cup sugar
2 cups ground walnuts
1 Tbs. coffee
1 Tbs. cocoa
2 Tbs. oil
preheat oven to 350 degrees
beat egg whites on high speed until stiff
in separate bowl beat yolks, sugar, and rest of ing. gently fold into whites. pour into a greased 9X13 pan
bake for 1 1/4 hours

YAY this marble cake is so easy to make and is delicious too!
Marble Cake
8 eggs
2 cups sugar
1 cup+2 Tbs. potato starch
2 oz. baking chocolate
Preheat oven to 350 degrees
Beat eggs and sugar on high speed for 15 min. add potato starch beat on the lowest speed til mixed in.
pour 3/4 of batter into 9x13 greased pan
Melt chocolate and add to remaining 1/4 batter.
Spoon chocolate batter over batter in pan and swirl with a knife
Bake 50-55 min.

Good and easy
Vanilla Pudding Cake
8 eggs separated
1 cup sugar
3/4 cup potato starch
1/2 cup oil
2 Tbs. orange juice
1 box instant vanilla pudding
Beat egg whites to soft peaks, add 1/2 cup sugar beat until stiff and refrigerate.
Beat yolks with other 1/2 cup sugar, add rest of ing.
Fold in egg whites.
Bake 350*, 1 hour.
I use tube pan.
