I would like to make big, main dish chicken wellingtons. Has anyone done this with an entire cutlet, or lots of little cubes? I have a recipe for mini ones that I love (from kosher by design) that says to salt and pepper and then sear them before baking, but I'm worried that a full cutlet will get too dry.

I've shredded the chicken first. Just used bone-in chicken and shredded it with my fingers...Often it's leftover soup chicken, boiled.
