We like this one:
1 apple, sliced
1 tablespoon potato starch
1 egg, separated
1 tablespoon sugar
lemon juice
These are the proportions; increase amounts according to the amount of kugel you want. I usually figure around 3/4 to 1 apple per person, rounding off to the lower side.
Sprinkle the apples with lemon juice and toss with the potato starch. Make a not too stiff snow with the egg whites, add part of the sugar to the snow and the rest to the yolks. Fold the yolks into the snow and the apples into the resulting mixture. You can bake this at the usual 350° or else fry it on a very low flame. Personally, I prefer the fried version as I find the baked one a bit dry.

Into a kugel shape in a small frying pan?
