big individual salads with sliced grilled chicken
quinoa or rice pilafs
lots of dips/spreads
tuna/salmon quiche

Turkey Salad (can also use cold chicken)
Dressing:
1/4 cup mayo
1/4 cup sugar
1/2 cup olive oil
2 cloves garlic, crushed
1 Tbs. fresh chopped chives (If you don't have, either skip, or I think I once put in 1 tsp. oregano)
1 Tbs. fresh chopped parsley (I only had dried, used 1 tsp.)
1/2 tsp. dried mustard (I used 1 tsp. regular mustard)
1/2 tsp. lemon juice
Salad:
1 head (or 1 bag) romain lettuce
1/2 lb. smoked turkey, torn up (I put it on a plate and cut it, it was much quicker than tearing each piece individually)
1/4 cup shredded carrots
Mix dressing ingredients, pour over salad, enjoy!
Once, my DH brought home a bag of cabbage instead of lettuce so I used that instead and it was also yummy!

(Quinoa) Tabouli salad
Chicken salad. I take the leftover chicken from the night before, debone it, cut it up into small peice, mix it with mayo and whatever other seasoning I cooked the chicken with. Serve, enjoy.
Chicken breast cooked in honey mustard, cut up small and served over a big lettuce salad. The honey mustard from the chicken works as a great dressing for the salad.
I posted a chilled zucchini mint soup recipe. That comes out yummy.
Gezpacho- blended salad- blended tomatoes, cucumbers, peppers, garlic, a little onion, salt. Serve as a soup.
Cantelope or some other melon as an orderves (sp???).

My boss gave me this suggestion around Succos time and we often do it for Shabbos lunch. Try making a Salad Bar.
You can make it as simple or as elaborate as you want. I put out a big bowl of lettuce and then smaller bowls of all types of toppings - grape tomatos, cucumbers, red onion, craisins, avocado, heart of palm, hard boiled eggs, different types of croutons, colorful peppers or anything else you like in your salad, and different types of dressings. I also usually cut up some smoked turkey or other deli meat that you can buy in a chunk, and once in a while I will grill a piece of meat (london broil or steak) and slice it up as well.
Then everyone makes their own salad, just the way they like it. Many times this is all we eat for lunch, especially if I add the turkey or steak. It's a great way to get kids to eat salad since many kids don't like dressed salads or all salad ingredients.
I've done this when I've had company - both adult company and when my kids have friends over - and everyone loves it. This will probably be our Shabbos lunch throughout the summer.

This is a HUGE hit with kids and adults alike:
Asian Chicken Salad
Lettuce and any of the following:
Red cabbage
Grated carrots and beets (grated from before shabbos)
Green onions
Chinese noodles, or rice noodles, fried before shabbos
Dressing: 1/3 c rice vinegar
1/4 c oil
1 Tbsp sesame seeds
1 tsp grated or powdered ginger
3 cloves minced garlic, or some garlic salt
1 1/2 Tbsp soy sauce
I also have served vichyssiose (cold potato soup) which my kids LOVE and fruit soup for appetizers
Salad bar is a great hit for everyone, I am thinking of it for this shabbos

Pizza, where do you buy your Chinese noodles? Is it the refrigerated kind?
