I never make challah except for on Friday so its fresh (unless I am freezing). I made today and it looks great but I am unsure. Freeze or just leave in foil and bag all wrapped? I am not so worried for Friday night as it still will taste fresh. However I am unsure about Shabbos day meal.
What do you do?

I wouldn't freeze it. Do you have a plata or something you can put it on? I'd do that - it'll make it taste fresh.

I would freeze. I find that even when I bake erev shabbos, by shalos seudos, my challah is already somewhat stale.

I say freeze as well. I make challa on a friday and freeze the ones for shabbos day.

I would freeze.
another option is to make the dough thursday, and bake it on friday.

I bake on thurs and refrigerate the dough until fri and the challahs are baked fresh before shabbos. But if and when I bake thurs I always freeze them
