Crepes:
3 eggs
1/12 cups of water
15 heaped TBSP flour
Beat the eggs add flour and water
let the mixture stand for at least half an hour or overnight
add more water if its too thick.
Filling:
1 cup smooth cheese
vanilla sugar to taste
can be made in advance and fried from frozen.
also delicious baked in cream
Enjoy!

Not sure where you are located.Here we get smooth and chunky cheese,I guess its smooth cottage cheese.Or cream cheese if thats whats available where you are.

I live in Johannesburg.It's definatley not ricotta cheese (wish we could get it here) just plain old farmer cheese or cream cheese!
