ISO Cheese Blintzes Recipe using Farmers cheese

Anyone have any awesome cheese blintzes recipes out there that uses farmers cheese for the filling? Also, any ideas how to make a potato filling?

I make my own mixture with:

farmer cheese
vanilla extract
sugar
a drop of milk for consistency

For a potato mixture I would do mashed potatoes with sauteed onions.

I like this one.

1 lb of farmer cheese
2 egg yolks
2 Tbsps melted butter
1 tsp vanilla

Mix all together and fill the blintzes

cheese
8oz cream cheese
1 1/2 lb farmer cheese
8oz sour cream
1/2cup sugar
1/2 cup confection sugar
1 vanilla sugar
1/3 cup milk
this is really a rich cheese but its heaven!


potato mashed with fried onions fill blinzes
mushroom sauce over it!enjoy!

I find that vanilla sugar gives it a bitter taste.

Batter:
12 eggs
3 c. flour
3 c. milk
3 T. sugar
12 oz. sour cream

Filling:
2 lbs. farmer cheese
8 oz. cream cheese
2 vanilla sugar
3 egg yolks
1 c. sugar

The crepes are the fluffiest I've ever had.
Yields about 45 crepes.
Fill a 1/3 c. measuring cup about 3/4 of the way.
Fry on one side until slightly gold

This is the best recipe I have ever made for blintzes. They were devoured.
