I just made a ton of banana bread and muffins. Do you keep them on the counter overnight or do you refrigerate? Please answer fast because I am ready to go to bed.

put them in a plastic baggie or an airtight container ... no refrigeration necessary ...

For how long will they stay fresh on the counter in the pan with foil on top? It is very very hot and dry here at the moment.

muffins are best the day baked and okay the next day ... but if it's hot I might freeze some ... unless like my house they gobble them up in a short span ...
