U can make baked apples. Scoop out the centers and fill with sugar honey and cinnamon. Bake covered, eat as is or with vanilla ice cream.

you can peel and quarter your apples and toss them with cinnamon and oil and bake it. Freezes very well.

In KBD there's a really good apple kugel recipe that's almost like a cake. It's sliced apples, a layer of apricot jam, & then a cakey batter on top. Yum! If you make something like that you'd have an apple kugel for shabbos. I made something similar today with peaches, nectarines, apricots, & plums & it looks really good.

I got this recipe from my mom. It's my favorite because it's fluffy, light, ad has no oil in it.
Apple Biscuit cake:
3eggs beat with mixer for about 5 minutes, slowly add 1 cup of sugar and 1 cup of flour all while mixing.
In a separate bowl slice up 2 sour apples, sprinkle 1/3tsp of baking soda over the apples.
Combine everything, gently mixing. Put in a deep baking dish lined with wax paper. Bake for 50 minutes on 350deg.

tart ti tan (french apple pie, also known as heaven on n earth in my family)
you need 10-12 apples
puff pastry
sugar
oven safe frying pan and a same sized pie dish
coat bottom of frying pan w/ thin layer of sugar. halve and core apples, then arrange in pan in circular pattern, standing up. turn on med heat until all sugar is carmelized. Cover the top of apples with puff pastry, tucking it into the sides.Put whole pan, on a baking pan (to catch runoff) in oven @ temp listed on puff pastry box. Cook until golden brown. Remove and invert into a pie dish. Enjoy warm, with ice cream if deisred
