I'm making carrot muffins, but I don't have shredded coconut (and I don't like it anyway...) It calls for a whole cup. Do you think I can just skip it? Or maybe I can substitute something?
any suggestions?

Make a different recipe that doesn't call for it. Or post the recipe and we'll tell you if it seems like the coconut will "make" the recipe in this case.
There are loads of delicious carrot cake/muffin recipes that don't use coconut.

Ok... heres the recipe:
3 c grated carrots
3 c flour
1 1/2 c sugar
1 c oil
1 1/2 t baking soda
2 t cinnamon
3 eggs
2 t vanilla
1 c chopped walnuts
1 c shredded coconut (!!!!!!!!!!!!)
1 c crushed pineapple unsweetened and drained
pinch of salt
frosting:
4 oz. cream cheese-softened
3 T unsalted butter-softened
1 1/2 c confectioners sugar
1/2 t vanilla
1 t lemon juice

I have a very similar recipe and it doesnt call for coconut. I would leave it out. I dont like coconut either.
