Chicken zucchini soufflé kugel
3 lbs/ ground chicken
6 gigantic squash
6 eggs
1 1/2 lbs. sauteed onions (measure after sauteed)
2 oz oil, or just pour a bit
3 teaspoons salt
1 flat teaspoon black pepper
Peel the squash, then use the coarse grater blade on your food processor and grate the squash. Combine with the rest of the ingredients and bake in individual pans on 350 for an hour. Freezes well. yields about 18-22 mini kugels. To use, reheat in oven, or turn upside down into a microwave safe bowl, and microwave on high for 4.5 minutes.

Hint: I put onions into the crockpot overnight with some oil, and I wake up to 8 quarts of sauteed onions for the freezer!
