anyone have a good recipe for something with brocolli or spinach in it? perhaps a quiche or pie or something.
also has to be PARVE

Try this one
1 pk spinach, cooked and drained
1 squash peeled and cooked
1 potato cooked and mashed
2 eggs
garlic powder
salt
3 T. mayo
3 T. bread crumbs
combine everything well. put into a deep square bekele (storage size)
add cornflake crumbs on top. bake 350 until set.
(Does not freeze well)

I make a good spinach one with nodles, from the spice and spirit purple cookbook, and a broccoli one with mayo and onuion soup mix. I think the latter is posted here.

I made spinach quiche for shabbat this week, came out yummy!
Pie crust
1 bag frozen spinach, cooked and drained
1 diced, sauteed onion (or I used 1/3 cup minced dried onion)
1 c. pareve milk
3 eggs
salt and pepper to taste
Combine, pour into pie crust and bake at 375F for 30 minutes.
