Really delicious onion soup with no msg

Not hiding, just watching--- hoping someone has the answer. Also looking for a nonMSG alternative to onion soup mix (that tastes like onion soup mix with msg)

Here you go. I make this without any onion soup mix, and it's delicious.

French Onion Soup
• 4 large onions, sliced
• 4 Tbsp butter
• 1 cup dry white wine
• 2 Tbsp flour
• 8 cups water
• more salt to taste, or 3 Tbsp onion soup mix
• 1 tsp salt
• ½ tsp black pepper
• French bread, sliced and toasted

In a 4-quart stockpot, sauté onions in butter over medium heat for about 8 minutes, or until caramelized to a nice golden brown, stirring frequently so they don’t burn.
Add wine and continue to sauté for 2 to 3 minutes.
Slowly stir in flour.
Stirring to keep lumps from forming, add water, onion soup mix, salt and pepper; bring to a boil over high heat.
Reduce heat to low, cover and simmer for 1 hour and 30 minutes.
Ladle into bowls and place and place a piece of french bread in each.

I love to then sprinkle with lots of cheese, which melts immediately in the boiling hot bowls of soup.

My recipe is very similar to ra_mom's, but after the onions are soft, add 2 tablespoons of spicy brown mustard, 3 crushed garlic cloves. Mix well, then add the flour and 1 Tablespoon sugar and mix well, then add in the water and wine. If you spice it well with salt & pepper, the mustard, wine, and sugar will complete the job.

A trick my mom taught me...if you want to get that nice brown color that comes from carmelizing with butter but you want to make it parve, use margarine and after the onions are shrunken (is that a word?) add some browning seasoning. It's made by Kitchen Bouquet and is in a small brown bottle with a yellow lable in the sauces section at reg grocery stores.
