brown onion, add it either alone or together with cooked chicken, and spices.

or add breadcrumbs and eggs and make it into kugel.

Rice kugel.
It's exactly like sweet lokshen kugel but with rice instead of lokshen.

I was going to suggest what Loche suggest.
you could also make a rice salad.
Rice is actually pretty easy; add it to the soup, mix it with meat or chicken and veggies and you have a whole meal.

Is it plainly steamed rice? You can make tomato-ey rice and add chicken gravy, serve with chicken.

or you can make fried rice (which is best made with leftover cold ones). Heat a tablespoon of toasted sesame oil, make a soft-ish scrambled egg and set aside. In the same pan, heat another tablespoon of sesame oil, add chopped scalions, frozen peas, red peppers, shredded cabbages, cooked chicken pieces or sausages. Add rice, adjust seasoning with salt & pepper and soy sauce. Add back and evenly distribute broken up scrambled egg pieces. This can be frozen, also reheats beautifully.

sweet

You could also sautee onions and mushrooms instead of adding raisins and such, just keep the eggs and use salt/pepper/garlic.

Actually leaving in the raisins and just exing the sugar, cinnamon and nuts would probably work as well.

I would fill small ziplock bags, maybe 2 cups each, and freeze. Then any time you need rice for a recipe, or to throw into soup, you have your very own convenience food. great for making Chinese stir-fry with leftover chicken from shabbos.

Fried rice.

3 T peanut oil heated in a pan or wok
4 scallions, chopped
4 scrambled eggs
Other cooked meat or veggies (we use peas often, broccoli sometimes)
Soy sauce to taste

Heat oil, add rice (I usually make it with 3 cups or so), fry until coated, push rice to side, pour in eggs, cook until solid then mix in with rice, add scallions and other things, cook until well mixed, add soy sauce (sparingly -- it's easy to overdo).

rice kugel is a reall delicious option.
I do this with my soup chicken:
saute onions and mushrooms or onions pepper zucchini, add flour to thicken, a bit of soup mix, seasoning, and water so u have a sauce. remove soup chicken from bone, add to sauce and serve over rice.
