Yum

Saute onion & crushed garlic. Then combine w/ the spinach & cheese. Fill the puff pastry doudh & bake.

Puff pastry dough is the wrong kind of dough for calzones. Calzones use a pizza dough.

However you can make mock spanikopita, which usually uses phyllo dough or you can make spinach-cheese bourekas.

I know calzones aren't made from puff pastry dough, but who cares call these berekes if you want.

I make a salmon encroute where I take a salmon filet (skinned) wash and pat it dry add a little lemon then top it with spinach, onion and mushrooms and dill (sauted and squeezed dry) then put a little cheese on top of that feta or mozzerella or what ever you like. Roll out puff pastry( to 1 inch longer than fish and a little more then double the with) Put fish inside and seal edges. Brush with egg white and score the top Bake at 400 for 30 minutes. You can also make this with canned salmon that is rinsed and drained.
