What's the deal with white whole wheat flour?

I just bought white w.w.flour for my challah. Does anyone know how it's done? what makes it white? Is it the same as regular w.w. flour?

I don't know the chemistry of it, but it's as healthy as w.w. but tastes like white.

Milled from white whole wheat, rather than red, unbleached King Arthur White Whole Wheat Flour has all the fiber and nutrition of traditional whole wheat, with milder flavor and lighter color.

I use it in all my baking - without adding any white flour.

Yes. I use it all the time, too, either plain or mixed with white.
