so I'm looking for recipes that are 100% whole grain for
-muffins
-waffles
-any other type of "mezonos"
also,
is vital wheat gluten only for bread and challah? or can it be used in muffins etc.?
and one more question:
any good parve mixes? I like the duncan hines blueberry muffins. but what about the buckwheat pancake mix from hodgson mill? any other suggestions?

Bran Flax Muffins (chock full of omega 3 and sooo delicious)
1-1/2 cups whole wheat pastry flour
3/4 cup golden flaxseed meal (ground flax seeds)
3/4 cup oat bran
1 cup brown sugar
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1-1/2 cups finely shredded carrots
2 peeled and shredded apples
1/2 cup raisins (optional)
1 cup chopped nuts
3/4 cup almond or soy milk
2 beaten eggs
1 tsp vanilla
Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, raisins (if desired) and nuts. Combine milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. Do not over mix. Fill muffin cups 3/4 full. Bake at 350 degrees F for 15-20 minutes.
