I have a cake that was well baked all around the edges but the middle was still mushy. How can I continue baking it so that the middle gets done without ruining the edge pieces? I put it in the freezer, so when I defrost it, can I just put it in the oven on a low temp to bake the middle?

Perhaps you could slice it horizontally and rebake it like that (so that the soft parts are exposed), and then treat it as a sandwich cake, with jam or icing in between?

Take it out of the tin. Wrap the outer edges (the baked parts) in aluminum foil...a thick layer/crumpled if necessary! Place in a larger tin and put back in the oven.
Or, you could try using a baking/heating core in the centre to conduct heat, but you'll still need to cover the edges.
