Streusel topped pumpkin muffins

Just made this and they are amazing. Thought I'd share...

Muffins:
4 c. flour
1 1/2 tsp. baking powder
2/3 c. quick/old fashioned oats
2/3 c. sugar
1 tsp. cinnamon
1 can (30 oz) Libby's pumpkin pie mix
2 eggs

Streusel Topping:
3 T. sugar
3 T. flour
3/4 t. cinnamon
2 T. marg/butter
Combine all ingredients until crumbs form. (It was too soft for me, so I doubled the sugar, flour and cinnamon and it worked perfectly)

Preheat oven to 400. Paper line or grease 24 muffin cups

Combine flour, baking powder, oats, sugar and cinnamon.
In a separate bowl, mix the pumpkin mix with the eggs.
Fold in flour mixture until all combined.
Spoon batter into muffin cups, filling 3/4 of the way.
Sprinkle with streusel topping.
Bake for 14-16 minutes or until wooden pick inserted comes out clean.

it doesn't even have a lot of fat, I'm impressed! think I could make them in a cake pan rather than as indiv muffins, skipping the topping?

Dunno. They're muffin like (more dry) so I don't know how well it will cut.

shoot, I only have a 15 oz can! (used the other one for pumpkin pie yesterday!) these look so delicious!
