I want to make some kind of spinach side dish, using cottage cheese. I want to make it in a skillet, like creamed spinach or something - not baked like a quiche or casserole.
Any ideas or recipes?

I would think that you could saute onions and garlic, add spinach, season with salt and pepper, and then add cheese.
Can you blend the cottage cheese first?

Thanks ra_mom. I'll try something like that. The cottage cheese is kinda runny, though. To what consistency should I blend it?
Any idea how long such a dish needs to cook?

If you can, blend the cottage cheese so that it has a ricotta cheese smooth consistancy, instead of the cottage cheese curdles.
I just realized that I make s/t like this to put on top of pizza dough.
Saute the onion and garlic until translucent.
Add spinach until excess moisture has evaporated.
Add oregano, basil, and black pepper. Mix well; remove from heat. Mix in cheese.
(I bake it afterwards, so I would actually continue to cook it a bit on the stove once you mix in the cheese.
FYI, about the pizza, I then top it with thin tomato slices, and sprinkle with shredded cheese.)
