Does anyone know the correct ingredients and proportions for cinnamon filling for rugelach? I have a dough recipe but it only specifies a chocolate filling and I want to make them cinnamon.

I doubt there's a "correct" proportion that's the be-all and end-all. It depends on how YOu like it. I personally just randomly sprinkle sugar and cinnamon, but you can use cinnamon babka filling as a guide.

my cookbook just says sugar and cinnamon - I think 1/2 cup sugar, tablespoon cinnamon. and oil or margerine to brush on the dough.
