How do I make matzah balls from matzah meal? (please include how many it makes)

I got this recipe from cookielady. We use it all the time and we love it. (small recipe)
Matzah Balls
• 1/2 cup matza meal
• 2 eggs, slightly beaten
• 2 Tbsp seltzer
• 2 Tbsp oil
• 1/2 - 1 tsp salt
• dash pepper
• garlic powder
Mix everything well. Chill in refrigerator for 30 minutes. Form balls. Drop into a pot of boiling water. Boil for 35 minutes.
For extra fluffy matzah balls, keep the lid closed and use a wide pot so that they have room to expand.
Yield: about 8 Matzah balls

sounds perfect, just I don't have seltzer in the house. Do you think it will be ok if I use water instead?

You can definately use water. The seltzer just makes it a little more fluffy.
But if you use a large pot and keep it covered, it will be fluffy enough.

use a touch of baking powder-fluffs them up too-instead of the seltzer.
