In middle of making brownies with dd. Just realized that I only have 3 eggs, and I need 4 for the recipe. The rest of the batter is already put together.
What should I do? Is there something I can use as a sub?
Please help ASAP.
Thanks!

I would put in a couple of tablespoons of water and just leave it. Remember - eggs come in different sizes so one less or one more won't kill it.

no worries... brownies will be a bit thicker (less cake like), you may want to add a LITTLE extra fat (I.e. butter or oil) to compensate for the loss in the yolk. but they should come out just fine.
That was wikipedia's answer!

Thanks, they came out delicious.
I made them as cup cakes and they fell a bit, don't know if that happened because of the eggs?
I added a Tbsp of oil and 4 Tbsp of water to the batter.

thats soooooo funny! I had the exact same problem tonight! making brownies and only 3 eggs!!!! I read in a cookbook (the newest cookbook by S. Finkel) she has all these tips and she suggests one tsp of cornstarch does the trick! will see if it works! I guess goood to know for next time for everyone!
