Mini Eggplant Pizzas
eggplants
tom sce
shredded cheese
You slice your eggplants in half inch circles and bake until s lightly brown, turning once. Takes about 4 minutes per side.
Top with sauce and cheese, and rebake or broil about 5 minutes or until cheese melts/browns. One large eggplants yields about 4 servings.

do this for lunch quite often.. its yum!! ( but I fry mine, hehe, muuch more fattening, but oh so good!)

Thanks for posting this, chocolate moose. I made it for lunch today & it was really good! I drizzled the eggplant with a little bit of olive oil & then sprinkled with salt, pepper, & oregano, but otherwise followed your instructions.
