Cooking for the end of Pesach; different foods?

What are you making? I have a lot of food in the freezer from the first days, but I needs salads and desserts; so I'm making:

Pineapple Sorbet
Apple Beet Salad
And probably lettuce type salads with fruit and nuts

Oh, and fish - I made rolls of gef. fish; half gef. and half salmon, but I'll probably also make plain baked gef. fish with sauteed onions, too, since it was popular the first days.

im making meat loaf, roast, carrot kugel, regular fish logs, sauteed eggplant, zucchini in tomatoe sauces, a fruit freeze dessert and apple crisp. now I just have to get around to finishing it all.

a cole slaw we enjoyed
used
3 apples
cashews
dried cranberries
cole slaw cabbage
whole can of pineapple tidbits (with juice)
2 TB mayo
lemon juice (can't remember a tsp or TB)

it was very good and lasted long w/out going bad, and used no sugar!
(and fibrous!) LOL
