Do you know of an American (probably NY) editor who would be interested in a thesis on Yiddish inside American English? I dont know where to start.

You could try the Forward, or any of the NY universities. The schools in NY tend to have yiddish departments. MInd you, they aren't at all frum, and sometimes they aren't even jewish. It's a whole culture on its own.

If they aren't frum they might dislike my work's "bias"... my teachers were non Jewish and didn't really "get it" but I know the "frei Yiddishist" type will probably hate it But I'll try.
Does the Forward also publish theses? I didn't know, I thought only articles.

It might be a good place to start -- maybe they can give you some guidance as to whom to speak with. Good luck!
