What's the recipe? IMO, rice vinegar tastes very different than white vinegar. It's less vinegary, and has a much sweeter taste.

Post the recipe.

I would use less vinegar or add more sugar and then taste it and adjust as needed.

use 3 parts white vinegar and 1 part water. add a pinch of sugar if you'd like. (I would recommend it.)
(to be exact, for this recipe use
4 Tbsp white vinegar
1 Tbsp + 1 tsp water)
