Ok so I love my potato kugel recipe, and don't want to drastically change it. (I.e. don't give me your recipe to try!). I cook it overnight and the top gets a little crunchy while the middle stays creamy. Problem is that lately, the bottom gets a thin gummy layer that is really pretty gross. Any ideas why this is happening and what to do about it? TIA!

try to do the original baking at a lower temp.

put a little oil in the pan and put it in a oven at 450 until the oil is sizziling - then add kugel mixture to pan - this will help make the bottom a little crunchy.

defy, why would that make a difference?
also, julia- I stir the kugel after I pour it into the hot oil. should I not do that?

I wouldn't be surprised if the gumminess comes from the fact that it's being cooked overnight. But I would definitely try the oil trick - WITHOUT mixing it! That completely negates the point of heating the oil beforehand.
Why wouldn't a thinner kugel make a difference? It would make it so that it cooks through a lot easier.

make sure your ratio of liquid (if you add seltzer or water) is less than the oil.

Around 350. I find that if I put it on a higher temp and the top gets cooked and the bottom gummy.

I bake it at 450 for 15 minutes then 400 for an hour and 45 minutes.

I add hot oil to the potato/egg/spices mixture. Mix. Bake on 550 for 1/2 hour, lower it to 250 for a couple of hours to make it that over night taste

Try baking it in a pyrex. The bottom comes out crisp like the top.

the gumminess is probably from the starch in the potatoes.
on pesach when cooking with potato starch I always get the gumminess on the bottom.
try rinsing the grated potatoes before mixing in the rest of the ingredients. that will remove some of the starch.
