I think it's all about presentation.
Make a one bowl, no mixer, cake (such as fudge brownie, or any other) in a round pan. Flip it over to smooth side when totally cool or frozen. Ice with chocolate frosting. Arrange a few berries, chocolate covered nuts, or chocolate shavings (use peeler on chocolate to make shavings) in middle of frosted top.
Place on cake tray.
Is that what you had in mind? Or are you looking for something different?

I can try to get some recipes for you from my mom.
Do you need recipes for sponge cakes, seven layer cakes, checkerboard cakes, rainbow cakes, etc. for cut up cake trays?

I understand. That's why I would ask my mom for recipes. She has the orginal classics.
Are these the types of cakes you mean? I will get only the easy ones.

Bundt cakes always look nice, when you glaze them.
You can do jellyrolls or cream rolls (easy and pretty). Let me know if you want a recipe or directions.
Then you can do plain chocolate, plain vanilla, honey cake and marble cake in 9x13s or 11x15s and slice and arrange on cake trays. Let me know if you need recipes as well.

Clarissa's double-decker brownies are pretty simple and look great. (I made them with white whole wheat this past Shabbos for dessert, nobody had a clue that what they were raving over wasn't pure garbage. )
It's basically, make one batter (mix by hand), split about 1/2, add melted chocolate to one and coffee to the other. Spread the chocolate batter on the bottom, sprinkle nuts, and then spread out the coffee layer. Bake for less than 1/2 hour.
It's really easy and looks great.

I was also going to say - anything made in a bundt pan will automatically look nice when inverted on a serving tray.

Here are 2 cakes that make nice squares for a platter and both are very good and a little different:
Chocolate Chip Apricot Bars
1 cup marg, softened
1 1/2 cups sugar, divided
2 egg yolks
2 1/2 cups flour
1 tsp vanilla extract
10 oz apricot jam
1 cup choc chips
4 egg whites
1/2 tsp salt
2 cups chopped walnuts
Cream marg, 1/2 cup sugar, and egg yolks.
mix in vanilla.
Add flour and knead with fingers.
Pat dough into greased 11 x 14 inch baking pan.
Bake at 350 for 15 - 20 minutes until browned
(if you accidently put in all the sugar - it is still okay - continue as directed)
Remove from oven. Spread jam. Sprinkle with choc chips.
Beat egg whites and salt until stiff. Grudually add remaining sugar. Gently fold in nuts. Carefully spread mixture on toop of jam and choc chips.
Bake for 25 minutes. Cool in pan. Cut into 2 in squares.
(These freeze really nicely)
Cocunut Toffe Bars
1/2 cup brown sugar
1/2 cup marg
1 cup flour
Mix. Press in ungreased 9 x 13. Bake at 350 for 7 - 10 min until just baked.
Mix:
2 eggs
1 cup brown sugar
1 cup shredded cocunut
1 cup chopped almonds (I've ommitted these and it was still good)
2 Tbsp flour
1 tsp baking powder
1 tsp vanilla
Spread topping on top of the baked layer. Bake about 20 - 25 minutes until browned. (Watch it so that it does not burn!)

Cinnamon Coffee Cake
This recipe is SO delicious and it looks beautiful when you cut it because it has a cinnamon swirl in the middle. I always make it in a plain bundt pan (because when you cut it you can arrange it so nicely on a platter), but you can make it in any pan.
Cream together:
1 tsp. vanilla
2 sticks margarine
1 1/2 C sugar
4 eggs
Add:
3 C flour
3 tsp. baking powder
1/2 tsp. salt
12 oz. coffee rich
Topping:
1/3 C sugar
1 tsp. cinnamon
To get the cinnamon swirl pour half the batter into the pan, then sprinkle half of the topping over it. Pour the other half of the batter in and then sprinkle the rest of the topping.
Bake @350 for about 1 hr.

Thought I posted this also, get a pan that you like. Make sure you spray it properly and let it cool properly. Use a thin metal spatula to pry it from the pan gently.
Make a nice glaze or ganache and sprinkle some pink sprinkles for a kiddush and you're good to go!
