I am looking for cooked salad recipes.
Does anyone have any good recipes for salads with cooked vegetables?
(Salads made with canned vegetables and frozen vegetables are fine.)

Matbucha
Grilled pepper salad
Mushroom salad
Grilled aubergine salad
"Coleslaw" made from flash-boiled (like 2-3min) shredded cabbage
Sweetcorn salad (tinned sweetcorn and mayo, chopped celery/red peppers optional)
Artichoke salad (either tinned or frozen artichoke bottoms, sliced and dressed with vinaigrette)
Baby pea salad (frozen baby peas and mayo, nice with chopped radish)

fry some cumin seeds. add one onion chopped. then dice four tomatoes and add. add a can of chick peas and some parsley to spice. very easy.

Does a broccoli tomato salad with balsamic dressing interest you? The broccoli is cooked, the tomatoes aren't.

Does some sort of pasta salad with cooked veggies interest you? One of the Kosher By Design books has angel hair pasta with cooked peppers & snow peas. If interested & need recipe, I have it somewhere.

can of green beans
1/2 can of corn niblets
diced red pepper
canned mushrooms
2 T oil
2 T sugar
1/3 c vinegar
salt
dash of oregano (optional)

very simple vinaigrette, about the same amount of lemon juice and virgin olive oil, salt & pepper, and chopped parsley. it should ideally marinate for like an hour before serving.

It's quite simple. Wash and slice mushrooms (you can easily use 1lb or more as they shrink once cooked). Peel and slice/crush garlic cloves (we like it very garlicky so can easily use 4-5).
Heat about 1tbsp vegetable oil in a large frying pan. Add sliced/crushed garlic and sprinkle some salt, sautee till garlic starts to turn golden. Add mushrooms, season with a bit more salt and freshly ground pepper. Continue sauteeing over high flame till mushrooms are cooked.
Some people use lemon/vinegar-based vinaigrette, you can add chopped red peppers and salad onions/scalions to add some colour and crunch.
Or you can skip salt, use teriyaki sauce for seasoning and sprinkle sesame seeds.
